Lemon Coleslaw


A variation of the classic coleslaw salad, but there's nothing soggy about this though, it is a crunchy sharp and snappy slaw.


Ingredients

  • 8 cups shredded cabbage (approx. 1 medium cabbage)
  • 1 red bell pepper, cut into matchstick strips
  • 1/2 small red onion, finely chopped
  • 1 carrot chopped
  • 1/2 cup chopped fresh parsley

Method

Dressing
1/2 cup mayonnaise
1/2 cup sour cream
grated rind and juice of 2 juicy lemons
2 tablespoons Dijon mustard
2 tablespoons olive oil
2 tablespoons sugar
1 tablespoon white wine vinegar
1 tablespoon prepared horseradish sauce
1 teaspoon celery seeds
salt and freshly ground black pepper

Combine the dressing ingredients in bowl, whisk to blend. Refrigerate dressing until cold (this can be prepared 1 day ahead).
