Curried Kumara & Pumpkin Chowder


Yummy Winter Chowder that can be whipped up easily for a heart warming chowder. Friends all around the home can enjoy it as you take it from stove top to table.


Ingredients

  • 50 g butter
  • 1 large onion chopped
  • 6 rashers of bacon, chopped coarsley
  • 1 teaspoon of curry powder or to taste of mild curry powder )
  • 1 kg of peeled chopped Kumara
  • 1 kg of peeled chopped Pumpkin
  • 2 large potatoes peeled & chopped
  • 6 cups of chicken stock
  • 1 cup cream
  • Salt & freshly ground black pepper to taste & parsley

Method

Melt the butter in a large saucepan, cook the onion & bacon for a few minutes then stir in the curry powder - stir for a few minutes then add the kumara, pumpkin, potato & chicken stock. Bring to the boil and simmer for 20 minutes until the vegetables are soft. Blend or process the soup in batches until smooth. Return to the saucepan and add the cream, salt & Freshly ground pepper & parsley. Serve with chunks of crusty bread or wholemeal toast.
