Pre heat oven to 200 degrees C
Panfry sausages in a non stick oven proof pan with a little oil until browned and cooked right through. Drain sausages on paper towels and chop into chunky bite sized pieces. Wipe out excess oil from the pan with paper towels. Place the sausage pieces, bread cubes and cherry tomatoes in the pan and sprinkle over the basil leaves and grated cheeses. Beat the eggs, milk and parsley together, seasoning generously with salt and freshly ground pepper. Pour this egg mixture over the pan ingredients, stirring just a little bit to evenly distribute the liquid. Bake for 25 - 30 minutes until puffed up and golden brown. Cut into portions with a spatula to serve.
