Pistachio Morsels


Yummy, simple treat for pre dinner nibbles


Ingredients

  • 100g butter, chilled and cubed
  • 100g tasty cheese, grated ( approx 1 cup grated )
  • 1 cup flour
  • 1/2 teaspoon salt
  • 100g mozzarella cheese, cut into 36 little cubes
  • 36 pistachio nuts, shelled

Method

Pre heat oven to 180 degrees C. Spray little silicone moulds or mini muffin tins with non stick baking spray.

Place the chilled butter cubes, grated cheese, flour and salt into a food processor and mix well until formed into a clump of pastry around the blade. Roll into 36 small balls and place into prepared tins. Press a tiny cube of mozzarella and a pistachio nut into each ball of pastry and bake for approximately 15 minutes until the pastry is golden and the mozzarella toasty and melted. Cool in the tin and then twist to remove.

Serve warm
