Lime Kelp Whitebait Bites


This can be made with other types of seafood besides whitebait. When they are out of season frozen whitebait works well

or try chopped up scallops, prawns, pieces of salmon or fresh fish bits!


Ingredients

  • 4 eggs beaten
  • 1 teaspoon lime kelp seasoning or lemon pepper
  • 1/2 teaspoon salt & freshly ground black pepper ( leave pepper out if using lemon pepper )
  • 1 tablespoon self raising flour - can be GF
  • 1 cupful whitebait, or small shrimps, crabmeat, chopped scallops or smoked fish

Method

Pre heat oven to 200 degrees C. Spray a tray of silicone flexipro mini-muffin moulds ( 24 ) with non stick baking spray.

Whisk the eggs in a small bowl. Add the lime kelp, salt, pepper and flour. Whisk to incorporate. Add the whitebait and spoon into each prepared muffin mould. Cook for 7/8 minutes until puffed and then set and lightly golden. Cool a minute or two then just pop out and serve. A little sprig of parsley and a squeeze of lemon juice is optional.
