This can be made with other types of seafood besides whitebait. When they are out of season frozen whitebait works well
or try chopped up scallops, prawns, pieces of salmon or fresh fish bits!
Pre heat oven to 200 degrees C. Spray a tray of silicone flexipro mini-muffin moulds ( 24 ) with non stick baking spray.
Whisk the eggs in a small bowl. Add the lime kelp, salt, pepper and flour. Whisk to incorporate. Add the whitebait and spoon into each prepared muffin mould. Cook for 7/8 minutes until puffed and then set and lightly golden. Cool a minute or two then just pop out and serve. A little sprig of parsley and a squeeze of lemon juice is optional.
