Fishy Fritters


Jo used this recipe in her Chatham island cooking demo.


Ingredients

  • 3 eggs
  • 1 cup of self raising flour or FRESH breadcrumbs
  • 2 cups chopped fish, any sort ( if you're lucky crayfish )
  • 1 tsp mild chilli paste or small red chilli deseeded and finely sliced
  • grated rind & juice of 2 limes ( or a lemon )
  • salt & freshly ground black pepper
  • big handful of coriander ( chopped )

Method

Mix all together - adding an extra egg if the mixtures too dry. Place a heavy duty silicon sheet on the BBQ flat plate - spray or brush with a dash of oil. Spoon out little fritters leaving room between to spread. Turn after a couple of minutes to brown both sides - EAT!!
