Fabulous easy vegetarian option!!!
In a bowl beat eggs. Mix in flour until a smooth batter ( can be done in a food processor or with an electric mixer ). Add pumpkin, hazelnuts, blue cheese, parsley, fresh ground black pepper.
Heat oil and butter over medium heat until bubbly. Spoon 2 -3 fritters into a pan and cook approximately 3 minutes. Then carefully turn and do the other side. Drain on paper towels and keep warm in the oven while you cook remaining mixture.
Great served with hollandaise sauce
