Lemon Coconut Tart


As seen on Jo's CTV cooking program. The quickest easiest pudding imaginable!!


Ingredients

  • 1 tablespoon grated lemon rind
  • 100 ml fresh lemon juice
  • 1 cup caster sugar
  • 4 eggs ( beaten )
  • 1 cup desiccated coconut
  • 125 g butter, softened
  • 1 cup cream
  • 1/2 cup coconut cream
  • 1/2 cup flour
  • icing sugar to dust

Method

Pre heat oven to 180 degree's C. Spray a 21 - 23 cm cake tin with non stick baking spray and line the base with baking paper. Place all ingredients except the icing sugar, in a blender and process until smooth. Pour over the prepared tin and bake for 45 - 50 minutes. Cover with a sheet of tin foil if the surface is getting to browned. Cool in the tin then refrigerate. Dust with icing sugar and serve with softly whipped cream and fresh berries.
