Vanilla Peanut Blondies


A Family favourite biscuit. A big vanilla taste in a pale nutty cookie - like a blond version of a peanut brownie.


Ingredients

  • 300g butter
  • 1 cup sugar
  • 2 teaspoons vanilla essence
  • 2 cups self-raising flour
  • 2 cups shelled roasted peanuts, can use salted peanuts

Method

In a bowl, beat together butter and sugar until creamy. Add vanilla essence, flour and peanuts. Place teaspoons of the mixture onto a baking paper lined tray leaving room to spread between each. Bake for 15 minutes. Allow to cool a few minutes on the tray before removing to a wire rack. Store in an airtight container.
