Early Grey Currant Loaf


Ingredients

  • 1 cup strong tea, Earl Grey is nice
  • 1 cup dried currants
  • 1 cup brown sugar
  • 2 cups self-raising flour
  • 1 egg

Method

Place hot Earl Grey tea, currents and brown sugar in a bowl and soak until the tea is cold, can be overnight. Preheat oven to 180 degrees. Spray a loaf tin with non stick baking spray and line with baking paper. Mix the flour and egg into the current mixture. Pour into the prepared tin and bake for one hour. Cool on a wire rack and serve sliced buttered.
