Cappuchino Date Slice


Ingredients

  • 2 eggs
  • 1 cup brown sugar
  • 180 g butter, melted
  • 1/2 cup milk
  • 2 tablespoons sweetened coffee & chicory essence
  • 1 cup dates, pitted and chopped into small pieces
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • For the Icing:
  • 2 cups icing sugar
  • 1 tablespoon sweetened coffee & chicory essence
  • 25g melted butter
  • boiling water

Method

Preheat oven to 150 degrees C. Spray 20 x 30 cm slice tin with non stick baking spray and line the base with baking paper. 

Beat eggs in a large bowl, add all other ingredients and mix well to thoroughly combine. Spread into the prepared tin and bake for 30 minutes. Cool the tin. Spread with coffee icing and cut into 30 slices when cold.

For the coffee icing: Mix all ingredients together adding enough boiling water to form a smooth glossy spreadable icing.
